Grasmere, the only other butcher in Stamford in 2020, is the exception that proves the rule - while all the others have closed, this is a new name.
The Stables family have farmed in the Deeping area since 1969 and first went into the butchers business in the 1980s when an unwanted sow was made into sausages using an old recipe.
Now, they have their own purpose built butchery on the farm which supplies 4 shops - in Deeping, Stamford, Bourne & Peterborough, 6 weekly markets and 12 farmers' markets.
All the ingredients are locally sourced and they use old recipes and methods.
